  • Ice cubes
  • Fresh mint leaves for garnish

  • Step 1: Prepare the Rhubarb Syrup
  • Combine Ingredients: In a small saucepan, combine the chopped rhubarb, sugar (or honey/agave), and water.
  • Cook: Heat over medium heat until it reaches a gentle boil. Stir occasionally until the sugar dissolves completely.
  • Simmer: Reduce the heat and let it simmer for about 10 minutes, or until the rhubarb is soft and the syrup has thickened slightly.
  • Strain: Remove from heat and let it cool for a few minutes. Then strain the mixture through a fine-mesh sieve to separate the liquid from the rhubarb pieces. Set the syrup aside to cool completely.
  • Step 2: Prepare the Cocktail
  • Muddle Strawberries: In a pitcher, add the sliced strawberries. Using a muddler or wooden spoon, gently mash the strawberries to release their juices.
  • Add Syrup: Pour the cooled rhubarb syrup into the pitcher with the muddled strawberries.
  • Mix: Stir the mixture gently to combine.
  • Add Sparkling Wine: Slowly pour in the prosecco or sparkling wine, stirring gently to mix.
  • Step 3: Serve
  • Add Ice: Fill wine glasses or cocktail glasses with ice cubes.
  • Pour: Pour the strawberry-rhubarb mixture over the ice.
  • Garnish: Add a few mint leaves on top for a refreshing touch.

  • Non-Alcoholic Version: Replace prosecco with sparkling water or a non-alcoholic sparkling wine for a refreshing mocktail.
