Method
Step 1: Prepare the Rhubarb Syrup
Combine Ingredients: In a small saucepan, combine the chopped rhubarb, sugar (or honey/agave), and water.
Cook: Heat over medium heat until it reaches a gentle boil. Stir occasionally until the sugar dissolves completely.
Simmer: Reduce the heat and let it simmer for about 10 minutes, or until the rhubarb is soft and the syrup has thickened slightly.
Strain: Remove from heat and let it cool for a few minutes. Then strain the mixture through a fine-mesh sieve to separate the liquid from the rhubarb pieces. Set the syrup aside to cool completely.
Step 2: Prepare the Cocktail
Muddle Strawberries: In a pitcher, add the sliced strawberries. Using a muddler or wooden spoon, gently mash the strawberries to release their juices.
Add Syrup: Pour the cooled rhubarb syrup into the pitcher with the muddled strawberries.
Mix: Stir the mixture gently to combine.
Add Sparkling Wine: Slowly pour in the prosecco or sparkling wine, stirring gently to mix.
Step 3: Serve
Add Ice: Fill wine glasses or cocktail glasses with ice cubes.
Pour: Pour the strawberry-rhubarb mixture over the ice.
Garnish: Add a few mint leaves on top for a refreshing touch.
Variations
Non-Alcoholic Version: Replace prosecco with sparkling water or a non-alcoholic sparkling wine for a refreshing mocktail.
Add Other Fruits: Experiment with different fruits like raspberries or blueberries for added flavor.
Herbal Infusion: Add a sprig of basil or rosemary to the muddled strawberries for a unique twist.
