  • Make the Simple Syrup (if not using store-bought):
  • Combine equal parts of sugar and water in a small saucepan (1 cup each is good).
  • Heat over medium heat until the sugar is fully dissolved, stirring occasionally. Allow it to cool before using. This can be made in advance and stored in the refrigerator.

  • In a cocktail shaker, combine the muddled strawberries, simple syrup, and fresh lemon juice (if using).
  • Add a handful of ice to the shaker and shake well for about 10 seconds to chill the mixture.

  • Use a fine mesh strainer to strain the strawberry mixture into a pitcher or directly into your champagne flutes. This removes the pulp, giving you a smooth drink.
  • Add Champagne:
  • Carefully pour the champagne or sparkling wine into each glass, filling it about three-quarters full. Gently stir to combine the strawberry mixture with the champagne.
