  • Prepare the Raspberries:
  • If using fresh raspberries, rinse them gently under cold water and pat them dry. If using frozen raspberries, allow them to thaw slightly for easier blending.
  • Make the Raspberry Purée:
  • In a blender, combine the raspberries, sugar, and lemon juice. Blend until smooth. If you prefer a seedless drink, strain the purée through a fine mesh sieve into a bowl or measuring cup, discarding the seeds.
  • Chill the Glasses:
  • To keep your Bellinis extra refreshing, chill your champagne flutes or cocktail glasses in the freezer for about 5 minutes before serving.
  • Combine with Prosecco:
  • Pour about 1-2 tablespoons of raspberry purée into each chilled glass. Slowly top with prosecco, pouring gently to avoid too much fizz. Stir gently to combine.
  • Garnish and Serve:
  • Garnish with a few whole raspberries or a slice of lemon on the rim of the glass for a festive touch. Serve immediately and enjoy!
