- 4 ripe peaches fresh or frozen
- 1 tablespoon of sugar adjust to taste
- 1 tablespoon of lemon juice
- 1 bottle of Prosecco or any sparkling wine
- Fresh peach slices for garnish optional
Method
Prepare the Peaches: If using fresh peaches, wash them thoroughly, pit them, and cut them into slices. If you're using frozen peaches, let them thaw slightly for easier blending.
Blend the Mixture: In a blender, combine the peach slices, sugar, and lemon juice. Blend until smooth. If you like a sweeter drink, taste the mixture and add more sugar if needed. You can also let this mixture stand for about 10 minutes to allow the flavors to meld.
Strain the Puree: Using a fine mesh strainer, strain the peach mixture into a bowl or pitcher to remove any pulp. This step is optional, but it gives your Bellini a smoother texture.
Combine with Prosecco: In each champagne flute, pour about 2-3 tablespoons of the peach puree. Slowly top it off with chilled Prosecco, being careful not to let it fizz over.
Garnish and Serve: Add a fresh peach slice to each glass for a lovely presentation. Serve immediately and enjoy!
Variations
Berry Bellini: Substitute peaches with strawberries, raspberries, or blueberries for a berry twist.
Frozen Bellini: Blend ice with the peach puree for a slushy version.
Non-Alcoholic Version: Use sparkling water or non-alcoholic sparkling wine for a delicious mocktail.
