  • 1 tablespoon of lemon juice
  • 1 bottle of Prosecco or any sparkling wine
  • Fresh peach slices for garnish optional

  • Prepare the Peaches: If using fresh peaches, wash them thoroughly, pit them, and cut them into slices. If you're using frozen peaches, let them thaw slightly for easier blending.
  • Blend the Mixture: In a blender, combine the peach slices, sugar, and lemon juice. Blend until smooth. If you like a sweeter drink, taste the mixture and add more sugar if needed. You can also let this mixture stand for about 10 minutes to allow the flavors to meld.
  • Strain the Puree: Using a fine mesh strainer, strain the peach mixture into a bowl or pitcher to remove any pulp. This step is optional, but it gives your Bellini a smoother texture.
  • Combine with Prosecco: In each champagne flute, pour about 2-3 tablespoons of the peach puree. Slowly top it off with chilled Prosecco, being careful not to let it fizz over.
  • Garnish and Serve: Add a fresh peach slice to each glass for a lovely presentation. Serve immediately and enjoy!

  • Berry Bellini: Substitute peaches with strawberries, raspberries, or blueberries for a berry twist.
  • Frozen Bellini: Blend ice with the peach puree for a slushy version.
  • Non-Alcoholic Version: Use sparkling water or non-alcoholic sparkling wine for a delicious mocktail.
