Method
Step 1: Prepare Your Ingredients
Start by squeezing fresh limes to get about 2 oz. of juice. Using fresh limes really enhances the flavor of your cocktail, so try to avoid bottled lime juice if you can.
Measure out 1 oz. of simple syrup. This can be easily made by dissolving equal parts sugar and water. Just heat the mixture until the sugar dissolves, then let it cool.
Step 2: Mix the Ingredients
Combine Lime Juice and Syrup: In a shaker, combine the freshly squeezed lime juice and simple syrup. If you like a sweeter drink, feel free to adjust the amount of syrup to your taste.
Shake it Up: Add some ice cubes to the shaker. Secure the lid and shake well for about 15-20 seconds. This will chill the mixture and combine the flavors beautifully.
Step 3: Add Fizz
Pour into a Glass: Fill a tall glass with ice cubes and strain the lime mixture over the ice.
Top with Club Soda: Slowly pour 4 oz. of club soda or sparkling water over the lime mixture. Stir gently to combine, being careful not to lose the fizz.
Step 4: Garnish and Serve
Garnish: Add a lime wedge and a sprig of mint for a fresh touch. This step is totally optional, but it makes your drink look even more appealing!
Step 5: Enjoy!
Sip your Lime Rickey slowly, and let the refreshing flavors take you away!
Variations
Berry Lime Rickey: Muddle some fresh berries (like raspberries or strawberries) in the shaker before adding the lime juice and syrup for a fruity twist.
Herbal Lime Rickey: Add fresh basil leaves or rosemary for an aromatic kick.
Frozen Lime Rickey: Blend ice with the lime juice and syrup for a slushy version perfect for hot summer days.
