- 1/2 cup diced honeydew melon
- 8-10 fresh mint leaves
- 1/2 lime juice and a wedge for garnish
- 1 teaspoon honey or agave syrup
- 1 oz white rum can be substituted with sparkling water for a mocktail
- 1/4 cup soda water or club soda
- Ice cubes
Step-by-Step Method
Prepare the Honeydew
Start by dicing your honeydew melon into small cubes. If you want to make your drink extra smooth, you can blend the honeydew to create a puree. But, from my own personal experience, leaving a few chunks in there gives a nice texture to the drink.
Muddle the Mint and Honeydew
In a sturdy glass or cocktail shaker, add the diced honeydew and mint leaves. Use a muddler to gently crush them together. The goal is to release the mint's oils without completely smashing it. The honeydew will also release some of its juice.
Add Sweetener and Lime
Squeeze the juice from half a lime into the glass or shaker. Add the honey (or agave syrup for a vegan option) and stir it gently to mix with the muddled mint and honeydew. This gives your mojito its refreshing sweetness.
Add the Rum and Ice
Pour in the white rum and a handful of ice cubes. If you're making a non-alcoholic version for a fun girls' night mocktail, skip the rum and just add extra soda water in the next step.
Top with Soda Water
Top the mixture with soda water or club soda. Stir gently to combine everything.
Garnish and Serve
Garnish your Honeydew Mojito with a slice of lime and a sprig of mint on top. You can also add a few extra chunks of honeydew on a skewer for a cute, edible decoration!
Chill (Optional)
You can let the drink sit for 5 minutes in the fridge for an extra cool, refreshing sip.
