Method
Step 1: Prepare the Ginger Syrup
In a saucepan, combine 1 cup of sliced ginger and 1 cup of water.
Bring it to a boil over medium heat, then reduce to a simmer for about 5-7 minutes.
Add 1 cup of sugar (or sugar substitute), stirring until dissolved. Simmer for an additional 10 minutes until slightly thickened.
Remove from heat and let it cool. Strain the syrup into a jar and discard the ginger slices. This ginger syrup can be stored in the fridge for up to two weeks.
Step 2: Make the Lemonade
In a pitcher, mix 1 cup of freshly squeezed lemon juice with 3 cups of cold water.
Add ½ cup of the ginger syrup (adjust to taste depending on how sweet or spicy you want it).
Stir well to combine. Taste and adjust the sweetness or tartness by adding more syrup or lemon juice.
Step 3: Serve
Fill glasses with ice cubes.
Pour the ginger lemonade over the ice.
Garnish with fresh mint leaves and lemon slices if desired.

Spicy Ginger Lemonade: Add a pinch of cayenne pepper for an extra kick!
